Installed at the Palais du Sénat in the heart of Old Nice — a historic venue already housing the Centre du Patrimoine Niçois — the Atelier Cuisine Niçoise is the official cooking course of the City of Nice and the Tourism Office. An official address giving this course a unique heritage dimension: learning to cook socca and petits farcis within the walls of a baroque historic palace, steps from Cours Saleya.
The classroom has 12 equipped workstations with all necessary equipment — and is one of the rare Nice cooking classrooms accessible to people with reduced mobility. The typical morning programme (welcome at 9:30am) includes the workshop and recipe presentation, a Niçois cuisine history, local produce discovery and the simultaneous preparation of two recipes.
The programme revolves around emblematic UNESCO Niçois cuisine recipes: pissaladière (bread dough tart with confit onions and anchovies), petits farcis niçois (stuffed courgettes, tomatoes, peppers), Niçois gnocchi, capouns (stuffed chard leaves), tourte de blette (sweet-savoury Niçois tart), socca (chickpea flour galette).
