Inaugurated in June 2024, the Hôtel du Couvent immediately establishes itself as one of the most successful hotel openings in recent years on the Côte d'Azur. A member of Marriott's Luxury Collection and now referenced in the Michelin Guide, this five-star establishment occupies a 17th-century former Visitation convent, at the top of Old Nice, facing the Sainte-Réparate cathedral. It unfolds across four buildings — including two contemporary ones — around lush cloistered gardens where fig trees, lemon trees and aromatic plants flourish.
Its 88 rooms and suites, conceived in a deliberate but refined monastic spirit, display a rare organic and stripped-back luxury style: no television (but excellent wifi), terracotta floor tiles, soothing beige tones, marble bathrooms, Fragonard olive oil products crafted in Grasse. On each door, two ceramic baptismal medallions indicate whether the guest wishes to be disturbed — a detail that encapsulates the entire philosophy of the place. The décor is inspired by Christian Liaigre's work: clean lines, square forms, taupe and earthen tones.
Le Restaurant du Couvent — Set in the historic building's patio, in a dining room with terracotta tiles and minimalist Christian Liaigre décor, it serves gastronomic Niçois terroir cuisine: fresh local produce, short menu regularly renewed. Gastronomic dinner recommended. Average spend: €60 to €90.
La Guinguette — The open-air restaurant beneath the cloister vaulting serves popular, generous cuisine: pan bagnat, daily fish, seasonal dishes. The preferred address for informal lunch in the shade of plane trees. Average spend: €30 to €50.
La Boulangerie — Open to the public, it offers artisan breads, pastries and viennoiseries prepared by the hotel each morning. A rare gesture in luxury hospitality that contributes to the establishment's local anchoring.
The hotel's bar, beneath the cloister arches, serves cocktails, local wines and house infusions in a setting of absolute serenity. The convent herbalist prepares bespoke infusions and remedies on-site from the garden's plants — an authentic practice recalling the sisters' healing tradition.
The Hôtel du Couvent's thermal space is a unique experience: echoing the Roman bath remains on the Cimiez hill, it offers a complete thermal journey — tepidarium, caldarium, frigidarium and unctuarium (oil room). Indoor open-air pool and rest pool. Access restricted to 16 and over. Exclusive partnership with VIP private beach 'Les Galets', reachable by electric golf cart.
Serene, timeless and secretive. The Hôtel du Couvent is immersion in another era — a Mediterranean parenthesis of rare purity. Silence reigns, protected by 17th-century stone walls. The team, dressed in monastic-inspired attire (nuns and monks reinterpreted), contributes to an atmosphere guests describe as 'magical', 'from another dimension'. This is tomorrow's luxury: sober, authentic, connected to place and history.
Highlights: Unanimously rated 'exceptional' — 'a magical place to restore oneself'. Service quality described as impeccable in every detail. Roman baths receive unanimous praise — 'Nice's most original spa'. In-room breakfast (especially the Fontainebleau crème fraîche) cited as unforgettable. Atmosphere described as 'a fantastic guest experience'. Guests often upgraded on arrival — 'a splendid room with terrace'. Ideal for families (Kids Club in summer, children's attention 'surpassing everything we've seen').
Areas for improvement: One isolated review reports a small, unheated bathroom in winter in an entry-level room. Navigating between four buildings can surprise on arrival. No television may disappoint some business travellers. Parking (€60/day) is public parking only nearby.
The Hôtel du Couvent may be the most beautiful hotel in Nice — and certainly the most unexpected. A confidential address for travellers seeking meaning, beauty and an authentic connection to Mediterranean history.
