Sometimes it takes one determined, visionary person to create something that didn't exist. Camille Berton, a self-taught enthusiast, founded in 2018 Amour Pâtisserie Végétale in Nice — a concept one can call without exaggeration a French pioneer in its category. Her proposition: a range of entirely plant-based, gluten-free, lactose-free, 80% raw pastries, made from raw, unprocessed, seasonal ingredients.

The principle of raw pastries rests on the absence of cooking beyond 42°C, thereby preserving the enzymes and living nutrients of the ingredients. Raw almonds, medjool dates, soaked cashews, coconut, raw cacao, fresh seasonal fruit — everything is selected with maximum discernment. The range is deliberately short: 6 to 8 references at a time, renewed with the seasons.

Signature Pastries

The Strawberry Tart (rice-chestnut base, lemon cream, fresh strawberries) is a masterpiece of lightness and freshness. Vaiana (almond, date, coconut) is a mineral and fragrant signature. The Amour pastry — chocolate, almond and coffee entremet — is the house's absolute bestseller, regularly described as one of Nice's finest chocolate creations across all categories. All pastries can be ordered whole for special occasions.

Philosophy

Camille considers raw plant-based patisserie not as a constraint but as a creative opening — an invitation to reconsider textures, flavours and methods. Her creations are not ersatz of conventional patisserie: they have their own identity, their own aesthetics, their own pleasure.

Pricing

Individual pastry €2.50–4. Slice of cake €5–7. Whole entremets to order from €35. Slightly higher prices than classic bakeries, justified by the quality and singularity of the ingredients.
