Her proposition: a range of entirely plant-based, gluten-free, lactose-free, 80% raw pastries, made from raw, unprocessed, seasonal ingredients.
The principle of raw pastries rests on the absence of cooking beyond 42°C, thereby preserving the enzymes and living nutrients of the ingredients. Raw almonds, medjool dates, soaked cashews, coconut, raw cacao, fresh seasonal fruit — everything is selected with maximum discernment. The range is deliberately short: 6 to 8 references at a time, renewed with the seasons.
The Strawberry Tart (rice-chestnut base, lemon cream, fresh strawberries) is a masterpiece of lightness and freshness. Vaiana (almond, date, coconut) is a mineral and fragrant signature.
