The journey of Jonathan Rochetin is one of the most beautiful career change stories in Nice's gourmet scene. An osteopath by training and practice for several years, he one day left everything to pursue a consuming passion for patisserie. Trained alongside his medical career, he opened at 14 avenue Maréchal Foch, steps from Jean Médecin and the station, a patisserie whose signature concept is unique in Nice: the personalised choux bar.
The idea is simple and delicious: the customer chooses their craquelin base (plain, pistachio, chocolate, lemon), their filling cream (Bourbon vanilla, coffee, praline, raspberry, pistachio…) and their topping (pistachio shards, fleur de sel, fruit coulis, cocoa powder). The choux is assembled and filled to order in front of the customer. A concept that transforms each purchase into a collaborative experience and explains the intense loyalty of its clientele.
Beyond the choux, Jonathan offers a range of vegan macarons — a technically difficult bet executed brilliantly — seasonal tarts with local fruit, original entremets and a few light savoury creations. Everything is homemade, with particular care for intolerances: vegan, gluten-free and reduced-sugar options on request.
Sparkling, warm and educational. Jonathan is often in the boutique to exchange with customers — his communicative curiosity and enthusiasm create a rare sharing atmosphere. The patisserie is human-scaled, with a few seats for on-site tasting.
