The story of Mama Baker is one of successful reinvention and conviction turned into business. Céline and Bastien Epeirier, former finance professionals, spent two years in Australia and California, where they discovered a culture of organic bread and natural sourdough totally absent from Nice on their return. After a Boulangerie CAP qualification for Céline and extensive training, they opened in July 2015 at 13 rue Lépante the first — and still unique — Ecocert-certified 100% organic bakery in the city.
Ten years on, Mama Baker has become a neighbourhood institution and one of Nice's finest bread addresses across all categories. The philosophy remains intact: all flours come from stone mills using organic French wheat, butter is AOP, salt comes from Guérande. Nothing is done by halves, everything is traced, everything is fresh.
This is the soul of the house. Céline bakes daily in the oven natural sourdough breads in around twenty references: country boule, petit épeautre and linseed bread, turmeric and sunflower seed bread, grain bread, rye, buckwheat, kamut, Pétanielle Noire de Nice — the local poulard wheat. Each bread has its own personality, an open crumb, a thick and resonant crust. The house baguette is a city reference.
AOP butter croissants, brioches, orange peel buns and coconut rochers are regularly cited among Nice's finest. The gluten-free chocolate cake is a discreet bestseller. Savoury vegetable tarts complete a counter that makes you want to take everything home.
Mama Baker also offers a coffee shop space with carefully selected seasonal coffees, sandwiches, salads and a fine organic grocery: farm juices from Margerie (Drôme), artisan jams, nut butters, teas. A complete stop for breakfast or the lunch break.
