Some patisseries are more art gallery than shop. Julien Dugourd — former pastry chef of La Chèvre d'Or in Èze and alumnus of Alain Ducasse's tables — opened in June 2023 at 4 rue Catherine Ségurane, between Port Lympia and Place Garibaldi, what has become in very little time Nice's reference patisserie. His creations, regularly going viral on TikTok and Instagram, combine impeccable technical mastery with breathtaking aesthetics.
The window display sets the tone: trompe-l'œil pastries of surgical precision — a lemon that is not a lemon, a strawberry concealing an entremet — perfectly golden viennoiseries, croissants filled to order with pistachio cream, millimetre-calibrated vanilla flans. Julien Dugourd is also renowned for his philosophy of light sweetness: his creations are deliberately low in sugar, allowing the flavours of fruits, spices and perfumes to express themselves fully without the screen of excess sweetness.
The flagship creations revolve around a few signatures: the mango-passion entremet with a perfectly dosed exotic profile, the vanilla flan unanimously cited as the finest in Nice, the seasonal strawberry-pistachio tart, and trompe-l'œil viennoiseries — a croissant in appearance, a surprise in the mouth. Contemporary, pared back, close to a luxury showroom. The Rue Ségurane boutique is small but superbly arranged — carefully lit display case, light counter, minimal furniture. Service is professional and sometimes judged slightly formal, but the welcome of the chef himself — often present and generous with explanations — more than compensates. Tables for on-site tasting are available, with a fine coffee selection.
