Valérie sources her specialities directly from the finest small farmhouse producers across French regions. No intermediary, no wholesaler — a direct dialogue with producers guaranteeing traceability, freshness and authenticity. Her selection includes classic cheeses (raw milk camembert, comté, roquefort) but also unusual references only passionate cheesemongers know how to find: fourme d'Yssingeaux, petit Gaugry aged in marc de Bourgogne, fermier gaperon in raw milk from Auvergne.
The house's great signature: homemade truffle specialities. The truffle brie — a raw milk soft paste from Brie, cut and stuffed with black truffle slices — is described by visitors as 'unforgettable'.
