At 12 rue Saint-Joseph, in the heart of Old Nice, Rosa Jackson created in 2003 what is today the world reference for Niçois cooking classes for an international clientele. Canadian by origin, who fell in love with Niçois cuisine during a childhood stay in Paris and then settled in Nice, Rosa has devoted over twenty years to transmitting the flavours, techniques and history of the Niçois culinary heritage to thousands of visitors from around the world.
The Petits Farcis signature experience is complete: the morning begins with a guided visit to Cours Saleya or Liberation Market — Rosa selects fresh produce, explains producers, local varieties, seasons. The group then joins the cooking studio in Old Nice for a hands-on class at the stoves — traditional Niçois cuisine (farcis, pissaladière, socca, pan bagnat, Niçois gnocchi) or pastry (macarons, choux pastry). The session concludes with tasting the cooked meal, accompanied by a Provence rosé.

In 2024, Rosa Jackson published the book Niçoise in the USA — a reference work on Niçois cuisine that received excellent reviews in American and international culinary press.
