Le Chantecler — Hôtel Negresco

Michelin Star MOF Chef Historic Setting Promenade View
About

Le Chantecler is not merely the flagship restaurant of the legendary Hôtel Negresco: it is a cultural landmark in its own right, a place where the history of the Riviera and French haute gastronomie converge in an exceptional setting. Under the direction of Chef Virginie BasselotMeilleure Ouvrière de France, the supreme distinction of culinary craftsmanship — the establishment has successfully modernised the codes of classical luxury while remaining faithful to the house spirit.

The setting is breathtaking: 1751 oak woodwork, master paintings (Monet, Picasso, Klimt), Baccarat crystals catching the golden light, Belle Époque architecture untouched by time. Here, the French art de vivre is omnipresent — every detail whispers the history of the Riviera and its glorious past.

Virginie Basselot's cuisine deploys a score of great purity, where local produce — sourced from both sea and Nice's hinterland — is magnified with surgical precision. The tasting menu is a vibrant celebration of the seasons: line-caught sea bass and oyster tartare with seawater jelly, golden sautéed sweetbreads with hill vegetables, a regional cheese trolley and spectacular desserts perpetuating the grand tradition of French table service with the trolley presentation.

Menu & Dining

Two main formats: the Découverte menu (5 courses, €165) and the Signature menu (7 courses, €230). Wine pairings suggested by the sommelier (from €90 supplement). Exceptional cellar featuring Provençal and Burgundy selections. Business lunch on reservation. Table service renowned for its attention to detail — each dish is presented and explained by the kitchen brigade.

Atmosphere

Hushed, majestic and intimate. Despite the opulence, the welcome remains warm, breaking the rigid barriers often found in establishments of this rank. The room is served in cathedral silence, punctuated by the discreet clink of silver cutlery. Dimmed lighting and shimmering crystals create an absolute romantic setting. In the evening, the view over the illuminated Promenade des Anglais is offered from certain tables — an invaluable privilege.

Visitor reviews

Positive points: Visitors are unanimous about the museum-like and emotional dimension of the experience. Service is described as among France's finest — anticipating every need without being intrusive, of rare precision and elegance. The cuisine receives constant praise for its aromatic clarity, split-second cooking and millimetre-precise seasoning. Many evoke the unique feeling of dining in a living museum — a total experience going far beyond the meal. Cheeses and the dessert trolley are regularly cited as highlights not to be missed.

Points for improvement: The cost of extras — mineral waters, aperitifs, digestifs — is considered particularly high, even by the standards of this level. A certain dress code is expected (jacket mandatory for men in the evening), which may deter more casual diners. Some visitors note that the service, while technically perfect, can seem slightly formal or distant at the start of the evening.

Overall: Le Chantecler remains at the pinnacle of Nice's gastronomic pyramid and among the great tables of the Côte d'Azur. The premier choice for grand occasions seeking the exceptional, both on the plate and in the architectural setting and service.
