A locally caught scorpionfish might meet a Thai coconut-lemongrass broth, a Niçois pigeon marry a Mexican mole sauce, vegetables from neighbouring hills dress in Rajasthan spices. The technique is irreproachable — both brothers honed their craft in the finest houses — but it is the openness to the world that defines Flaveur.
